Going for 60 dex will still give you plenty of options though. It'll lock you out of some of the high str weapons, but it will improve damage on some of the more dex focussed weapons. Personally I'd recommend going 40/40, since it allows you to experiment a bit more. Once you've made a final decision, you can always respec.

For PVE, strength is good. Really anything is good in PVE, so dont worry too much. Things like vordt's hammer annihilate bosses and ultras are amazing for taking on stronger enemies.
